SEOUL, South Korea — Seoul Dragon City, which operates four Accor hotels in Seoul’s Yongsan District, has completed the renewal of its bakery and dessert café, A La Maison Deli, introducing a premium hotel deli concept inspired by French artisan baking traditions.

According to Seoul Dragon City, the renovated A La Maison Deli is located on the first floor of ibis Styles and has been repositioned with a stronger focus on product fundamentals, including ingredient quality, fermentation processes, and production methods. The renewal comes amid growing consumer interest in bakery products that emphasize craftsmanship and raw material quality over decorative presentation.

The hospitality complex said the refurbishment was designed to strengthen the competitiveness of its bakery offerings by highlighting signature products and expanding a bakery and dessert lineup centered on ingredients and production techniques. Through the renewal, the hotel aims to establish A La Maison Deli as a premium hotel bakery that guests and local customers can enjoy as part of their daily routines.

A La Maison Deli has been redesigned to offer a broad range of bakery and dessert products suitable for various occasions, from everyday indulgences to gifts and celebration desserts. The venue is positioned to cater to different customer lifestyles while delivering a distinct culinary experience associated with hotel-operated bakery concepts.

The renewed menu focuses on showcasing the natural flavors and textures of ingredients. Signature products include fresh bread, soft baguettes, bagels, and croissants, each developed with specific production methods and selected ingredients.

Among the featured items is the bakery’s fresh bread, known as “Saeng Sikppang.” The product is made using a blend of three premium flours and undergoes a long low-temperature fermentation process before baking. The result is characterized by a soft texture and subtle sweetness.

Another signature offering is the soft baguette. Prepared using French T45 flour and natural sourdough starter, the bread is paired with condensed milk cream and yellow cheese cream. The combination is intended to create a balance of mild flavors and rich depth.

The bakery has also introduced bagel varieties produced using the tangzhong method, a technique commonly used to enhance moisture retention and texture in bread. The plain bagel is designed to deliver a chewy texture, while the butter bagel incorporates French gourmet butter as a key ingredient.

Croissants are another central feature of the renewed lineup. The products are made using French fermented butter and French flour. In addition to classic croissants, A La Maison Deli offers cream-filled variations featuring flavors such as hojicha and jasmine, providing guests with a wider selection of options.

The introduction of these bakery items reflects the broader concept behind the renewal, which emphasizes traditional baking methods and ingredient-focused craftsmanship. Seoul Dragon City noted that the updated concept draws inspiration from the philosophy of French artisan bakeries, where attention to raw materials and fermentation plays a significant role in product development.

The renewal also supports the hotel complex’s efforts to expand food and beverage experiences beyond traditional dining venues. By strengthening its bakery and dessert offerings, Seoul Dragon City is broadening the range of culinary products available to hotel guests while also attracting visitors from the surrounding community.

Located within the ibis Styles property, A La Maison Deli is accessible not only to hotel guests but also to office workers and local residents in the Yongsan area. To increase accessibility, the bakery operates a daily Happy Hour promotion from 8 p.m. to 9 p.m.

During the promotional period, bakery products and salads are available at a 50 percent discount, while sliced cakes and whole cakes are offered at 30 percent off regular prices. The initiative is intended to make hotel bakery products more approachable for a wider range of customers.

The renovation marks the latest development in Seoul Dragon City’s food and beverage portfolio. The hospitality complex continues to operate four Accor-branded hotels in Seoul and offers a variety of dining and lifestyle experiences within the integrated property.

A representative of Seoul Dragon City said the renewal focused on strengthening product competitiveness by reinforcing the fundamentals of baking, including ingredients, fermentation, and production processes, while embracing the philosophy of French artisan bakeries. The company also indicated plans to continue offering premium bakery experiences through A La Maison Deli as part of customers’ everyday lives.

With the reopening of A La Maison Deli, Seoul Dragon City has introduced a refreshed hotel bakery concept that centers on artisan baking techniques, carefully selected ingredients, and a diversified menu of breads and desserts designed for both hotel guests and local visitors.
