NoMad Debuts Singapore Flagship With Three F&B Concepts

SINGAPORE — NoMad is preparing to enter the Asia Pacific market with the opening of NoMad Hilton Singapore in late 2026, using a food-and-beverage-led strategy that positions Singapore as the brand's regional flagship. Announced by Hilton, the 19-storey luxury hotel will introduce four dining and beverage venues while strengthening the brand's leadership team through a series of global and local executive appointments to support its expansion.
Located in the heart of Orchard Road, NoMad Hilton Singapore represents the brand's first property in Asia Pacific. Rather than centering its market entry solely on accommodation, the project places food, beverage and hospitality experiences at the core of its positioning, with multiple concepts designed to operate throughout the day and into the evening.
The development combines NoMad's established hospitality identity with concepts created specifically for Singapore. Across the property, guests will encounter a New York-inspired steakhouse, a cabaret-themed cocktail destination, a dessert and cocktail venue, and a rooftop poolside lounge. Together, the venues are intended to create distinct social destinations that extend from the hotel's reception area to its rooftop.
The flagship dining venue, NoMad Grill, draws inspiration from classic New York brasseries and traditional chophouses. The restaurant will focus on dry-aged meats sourced globally and prepared over wood fire alongside seafood and seasonal produce. Tableside service will reference New York's grand dining traditions while adapting the experience for Singapore.
Another major component of the hotel's F&B strategy is Sticky Fingers, a concept introduced by NoMad for the Singapore property. During daytime operations, the venue will serve house-made gourmet soft-serve sundaes inspired by nostalgic desserts. As evening approaches, the space transforms into a cocktail bar where desserts and beverages are paired through changing flavour combinations, with menus incorporating local ingredients.
The property's cocktail programme continues through The Tropicana Club, which takes inspiration from the golden era of cabaret and Havana's entertainment scene during the 1940s and 1950s. The venue also references Singapore's own Tropicana Club, established in 1953, blending both influences into a contemporary interpretation of NoMad's hospitality style.
Its beverage menu will feature classic cocktails including Martinis, Daiquiris, Manhattans and Cuban-inspired drinks, while incorporating ingredients and flavours from Singapore and Southeast Asia. Live music performances and curated DJ sets will accompany the cocktail programme, positioning the venue as a day-to-night social destination.
Completing the hotel's hospitality offering is Lú Bar, located beside the swimming pool. Designed as a quieter setting surrounded by greenery, the venue will serve aperitivo cocktails and refreshing beverages throughout the day. Interior artwork and design elements will reference the symbolism of the heron while complementing the property's broader hospitality concept.
Collectively, the four venues are intended to create immersive dining and beverage experiences that reflect Singapore's diverse culinary landscape while introducing NoMad's globally influenced approach to hospitality. The operating model also supports multiple guest occasions across different times of day, allowing each venue to maintain its own identity while contributing to the overall guest experience.
Leo Robitschek, Global Head of Bars and Hospitality Development at Sydell, said Singapore's global reputation as a food-and-beverage destination made it an important location for the brand's regional debut. He said NoMad's objective extends beyond bringing the brand into a new market, focusing instead on creating concepts that feel connected to Singapore's culture while maintaining the warmth and hospitality associated with NoMad.
Robitschek leads NoMad's global cocktail programme and has received international recognition including the James Beard Award for Outstanding Bar Program, as well as inclusion on the World's 50 Best Bars list.
Alongside the property's opening plans, NoMad announced several senior leadership appointments supporting both its global culinary strategy and the Singapore launch.
Josh Harnden has been appointed Global Culinary Director for the NoMad brand. Bringing more than 20 years of culinary leadership experience, Harnden has held roles across Michelin-starred restaurants, internationally recognised hospitality groups and multiple concept-driven openings.
His previous positions include serving as Partner and Creative Culinary Director at Eleven Madison Park, while his career has also included leadership roles at One White Street and The Noortwyck. Harnden additionally worked in the original NoMad New York kitchen during the early stages of the brand's development.
In his new position, Harnden will oversee NoMad's global culinary direction, including menu development, operational standards and the creative framework supporting the brand's dining experiences. He will also play a leading role in shaping the food-and-beverage development of NoMad Singapore ahead of its opening.
Supporting the property's culinary operations is Lorenz Hoja, who has been appointed Director of Culinary for NoMad Singapore. Hoja brings international experience developed across kitchens in England, France, Austria, the Maldives and Singapore.
He spent more than a decade working alongside chef Joël Robuchon, including at Singapore's two-Michelin-starred L'Atelier de Joël Robuchon. In his new position, Hoja will lead the hotel's culinary vision by combining technical expertise with NoMad's hospitality philosophy, focusing on ingredient quality and thoughtful cooking.
NoMad has also appointed Bernardo de la Garza as General Manager of NoMad Singapore. Bernardo brings more than 18 years of international hospitality experience across luxury and lifestyle hotel brands.
His leadership background includes senior positions with Six Senses, Hyatt Hotels and Accor, most recently serving as General Manager of The Standard, Bangkok Mahanakhon. He will oversee operations as NoMad prepares to establish its first Asia Pacific property, with the Singapore hotel positioned as the brand's flagship destination in the region.
Scheduled to open in late 2026, NoMad Hilton Singapore marks a strategic milestone in the brand's international growth by introducing its hospitality model to Asia Pacific through a destination centred on culinary experiences, cocktail culture and executive leadership aligned with long-term regional development.
